"Appetiser With Pimento Dressing"

- 750 g barramundi fillets.
- court bouillon (recipe in sauce section).
- 1 tablespoon grated onion.
- salt and pepper.
- lettuce cups.
- parsley sprigs.
- 1 cup mayonnaise.
- 2 teaspoon Mexican - style chili powder.
- few drops tabasco sauce.
- 1 teaspoon lemon juice.
- 2 teaspoons chopped black olives.
- 1 canned red pimento, drained and chopped.
- salt and pepper.
- poach fish for 5 minutes in court bouillon.
- refrigerate in liquid cold.
- drain, cut into bite- size cubes, toss lightly with grated onion, adjust seasoning.
- divide among four lettuce- lined serving dishes.
- combine dressing ingredients and spoon over, garnish with parsley sprigs.
